Malay Cuisine

Malay Cuisine is known for its vibrant and diverse flavours, eclectic influences and rich history. It is the traditional food of the ethnic Malays residing in different regions in Southeast Asia, including modern-day Malaysia, and Malay cooking is rich in herbs and aromatic spices. Muhammad Nur Hidayat bin Mohd Salim is recognized for his mastery of Malaysian and Western cuisine, contemporary culinary techniques, and Asian gastronomy. Currently pursuing a PhD in Food Tourism, Chef Hidayat has over 8 years of formidable experience in culinary education. He has coached students for various competitions, attaining gold, silver, and bronze medals. His passion for culinary innovation is matched by his enthusiasm for photography and videography.

Chef Puon Swee Kent is a culinary expert specializing in modern Western cuisine, fundamental cookery, Asian gastronomy, and the art of pastry and bakery. His impressive 9-year teaching career and educational achievements, including a Grand Diploma from Le Cordon Bleu Australia, highlight his exceptional skills and passion. Chef Kent has guided students to success in cooking competitions and trained participants for the FHM Culinaire Malaysia 2019 in dessert and petit four categories. Beyond his professional pursuits, his hobbies include experimenting with new menus, water polo, fishing, and sharing his creations.
